Put your lemongrass and basil herbs to work in this unconventional and refreshing ice cream recipe that’s easy to make!

I had the pleasure of tasting this herbal ice cream while working on the Home & Family show recently.

Lily Diamond, the recipe author,  grew up in a home filled with herbs so she has a taste for interesting combinations.

Enjoy your lemongrass and basil in a new way!

 

Ingredients for Lemongrass Basil Coconut Ice Cream

2 (13.5 ounce) cans coconut milk
1 cup fresh basil leaves
½ cup honey (I use Wholesome Yum’s “Keto Honey”)
1½ tablespoons cornstarch
¼ teaspoon sea salt
1½ teaspoons lime zest
2 tablespoons lime juice
6-inch length of fresh lemongrass
1 tablespoon vodka (optional, to keep scoop-able)
Ingredients for Black Sesame Brittle
? cup toasted black sesame seeds
1 tablespoon pure maple syrup (I use Wholesome Yum’s “Keto Maple Syrup” made with Monk Fruit and Allulose– it’s diabetic-friendly)!
¼ teaspoon lime zest, plus more for garnish
1 generous pinch flaky sea salt
